Giving up wheat flour bread is nearly impossible for most people. You must be very motivated and determined. I make an Atkins bread, but it is nothing like what you're used to. We have a slice with dinner every night, and I will occasionally have a slice for lunch with ham and mayo. I love the flavor and texture of this bread and rarely if ever eat wheat bread.

I honestly believe people become addicted to wheat flour, and most fail to switch to non wheat products no matter how hard they try.

Low Carb Flax Meal Bread

Olive oil spray
3/4 C 100% whole ground golden flax seed meal
3/4 C almond meal
3/4 C grated Parmesan cheese
1 T dried herbs of your choice (I use 1/2 T)
2 t baking pwd
2 t stevia (I use zylitol)
1 t crushed red pepper (optional)
5 lg eggs
1 T olive oil
1 T each pumpkin seeds, flax seeds and sunflower seeds (I use a pumpkin seed/sunflower seed mix I find at Walmart)

1. Preheat oven to 350 degrees. Coat a 1 lb loaf pan with olive oil spray. (8" pan works best.) Mix the flax seed meal, almond flour, Parmesan cheese, dried herbs, baking pwd, stevia, and red pepper flakes, if desired, in a large bowl, stirring well to combine.

2. Add the eggs and oil to dry ingredients, using a wooden spoon to combine. Transfer to the prepared loaf pan, and sprinkle with the seeds. Bake 35-40 minutes, until the loaf is firm to the touch and the crust starts to brown. Transfer to wire rack to cool. Store, refrigerated, in an airtight container or alum. foil for up to 5 days.

I am not a baker to need flour to make a dish, so not much help. I stick to protein, salad, veggies, eggs, peanut and tree nuts.

I see Neeka posted a recipe

if you can't tolerate it, go cold turkey and cut
it out of your life.

it's not easy, but one can live without eating a
sandwich.
