Thank da_spot. I always wished I'd taken a few cooking classes in Chinese cuisine, and have also done a bit of experimentation, but not enough to know what the heck I'm doing. There is a local store that carries a huge selection of Asian foods, and also an H mart with several small Asian shops, and one huge grocery store in a town about 40 miles from me. I go there sometimes when I'm down valley, but I almost exclusively buy those packages of seasonings you find on the shelves, buy what I need from the list of ingredients, and follow the directions. I'm going to try black bean sauce chicken.
