Why would the EU pass a law saying all their companies could get clobbered by a US law? Even if the EU passed such a law, most companies would just decide it didn't make economic sense to do biz with Iran, which would have the nice side effect of not getting them in trouble with the US. Do you think the EU will pass a law saying EU companies MUST engage in biz with Iran? And then those companies can loss their USA market instead?

I see only two outcomes, aside from Trump back tracking: 1) The EU caves and effectively puts economic sanctions back on Iran, or 2) The EU says FU to Trump, and sets about replacing the $ with something else. The consequences of 1) are Iran on a fast track for nukes and possibly war with the USA and Israel, while 2) would cause a world wide recession, and be catastrophic for the USA in particular.
