I'm going to contact the manufacturer and see what they say about temperatures. I'm also going to check my line voltage to see if it's running high. Power = V^2/R, so assuming R is fixed (the heating element), total heating energy goes up with the square of voltage differences. If Power at 115 VAC = 15 Watts, that implies R = (115)^2 / 15 = 881 ohms. If line voltage is 120 with the same heating element, Power would be 16.35 Watts or a 9% increase for only a 5 Volt overage. This could explain a 9% temperature difference (i.e. 120 deg versus 110 deg also equals 9%). If this is the problem, exchanging units would not solve it. BTW I've checked with 2 digital thermometers, both of which are within 0.5 degrees at 212, so I don't think I'm getting a bad reading.

I was using Newly's recipe for starter (modified from 2 tablets to 3 to be on the safe side). With tablets costing $25 per 30, I'm not going to use 10 if 2 or 3 works as well. Will be interesting to see what my next batch looks like at 24 hours using my most recently saved starter.

At least I'm apparently getting L.reuteri and hopefully my next batch will be even better using starter from this batch. I just need to solve this over-temperature problem.

EDIT: I just checked my line voltage and it's 121.7 VAC. I bet they designed using 117 (which is more nominal) and that is my problem.
