I don't know nothing about lava, but from that video it looks like once the flow has "settled" into a path that it steadily builds a higher and higher channel for itself as the spillover cools on the banks. On the flip side, I imagine that the higher the flow gets the more likely it is to break out of its channel, flood a new place, and start the channel building over. Or maybe it is stable now for a while? Beats me...
