I've used both types of flour in different recipes, and coconut flour is much less dense than almond flour. It doesn't cook or bake like it so the end product is always much lighter and fluffier. That sounds nice for a biscuit, but in this case it wouldn't work. I very rarely see a recipe that uses coconut flour exclusively as this one does with almond flour.
