I'm so sorry. Mine is more a serious sensitivity- about 20 minutes after eating corn I start throwing up, and needing a toilet. It's super fun. I have to be really careful with my diet in the US. Carrageenan just triggers the lower end- but if I get any in my food, I'm stuck in a bathroom for like 2 or 3 hours. I wish more people who think they have IBS would do elimination diets- then they wouldn't be taking pills for a dietary issue.

Has your wife tried an elimination diet? Start with a purge of eating just white rice, roasted plain chicken and veggies. If that works out- add in elements you think might be a problem one at a time- you'll soon narrow it down and find the culprit. It might be an additive- in which case, make up a business card with the food that she's allergic to, and hand it to every waitress. If they can't check the food, don't eat there. Your wife's allergy sounds like the kind that could develop into something life threatening.

Crab or shrimp can do that.
