I used to think that I have no allergies at all. But then I found a doctor who hoarded over a hundred different samples and he did an extensive test on me. Both my arms were covered by sets of 4x10 tests. We discovered a few allergies right away. But interestingly, the most severe allergies did not show up until more 2 days later. And some not only began to show 48 hours later, but they peaked longer than that and lasted almost a week. Fortunately, he had anticipated that had left me with instructions. I came to realize that a lot of issues that I had attributed to other things were allergies.

Try to find someone affiliated with a university or medical research center. Make sure they have an extensive set of test substances. Because some severe allergies can take more than two days to show up, you can't readily test them by elimination. What is more, it can take a while for the inflammation to subside even after you've stopped the exposure. This complicates the simple "what did I eat today/yesterday" kind of analysis.

Keep a log if it happens again. Then try adding in some of those things- maybe you'll catch it.

I don't react to corn on an allergy test. So I'm leery about how accurate those things are.
