Hello Robert -

I gotta say the big splash of dark cherry infused balsamic vinegar now that sounds inspirational.

In college out west a group of 5 friends and I would hunt the season together - each rotated a day and whoever made the kill it was your day...!!! <smile>

Being young and poor I'd purchased a Marlin lever action 30/30 in pretty okay shape with a nice long barrel - (a few years back I sent the serial numbers into Marlin... shipped in 1895) - it was already 75 years old... probably came west with a homesteader - I still have it... this reminds me it needs to be oiled.

Anyway, I never did kill anything with it - try as I might round after round nothing came close <smile> but I did get my yearly deer and antelope and share of elk by helping others to theirs. We also fished the winter rivers for white fish that when fried in beef tallow was tolerable. With the rented freeze locker loaded my wife an I could ride out a winter very easily.

Venison got very tiring to eat... no matter what the cut... the tallowy taste would get to you... after a while I learned a few tricks
- eat it right out of the caste iron or on really hot plates
- pick every single speck of fat off it and cut the steaks 1/2 inch thick and not to over cook
- as the winter went on we tried corning it, brining it, marinating it for 24 hours... then we'd pound the hell out it <smile>
- Anyway, beef suet worked well also... and free if you said it was for the birds...
