Thanks. Our local supermarket sells these free range, organic, all vegetable fed, air chilled chickens. They have a SELL BY date - which happens to be today (although I bot them last nite). They mark them down to make sure they sell (otherwise they go into a rendering bin). I paid .99 per lb. --- so the two of these cost ~ $10 bucks. They are really good chickens. The giblets are neatly packed (neck is skinned) in a sealed container inside the chicken.

The rest went into the broth.



After the chicken reaches 165 degrees { about 35-40 min) I remove it. Debone chicken and put bones back in broth. This broth simmered about 10 hours and yielded approx 5 1/2 - 6 quarts of very rich broth.

Two quarts of broth are set aside for tomorrow nite's dinner of chicken and dumpling soup, which will also use some of the meat,

With the remainder of the meat we will make chicken pot pies.

I also remove the skin. I deep fry it. I love it just plain but also like to put in on top of, say, a butternut squash soup, like a chip.
