The key word is "more".

Most NT servers use Intel CPUs but DEC's Alpha is a good server that can also run NT.

The limitation here is Windows NT - it is used for a lot of smaller server applications but big institutions with serious stability/reliability concerns still prefer Unix or a flavor of Unix (e.g., Solaris).
