Hi Chief,

The USDA grades beef. There's inspectors on site at the large packing houses. USDA prime is the absolute top grade...just a few percent get prime rating. It's a combination of very high level marbling and young age. Prime is tops..Choice is next. Some places play games and do some fake advertising...but if you see the USDA label and the prime rating, its the real deal. Prime grade beef may or may not be angus...isn't the breed per se.

Angus is a breed. In general angus is one of the better beef breeds. Known for good marbling. But an angus when processed can come out at all different levels in grade. I've seen some lousy looking angus heading for market. The angus association has done a pretty good job marketing themselves and has convinced consumers it has to be angus to be good. Ain't necessarily so. There's a lot of places abusing the label also. False advertising. If you see a store or restaurant using the term "certified angus" chances are they are for real...penalities for false advertising can happen if you falsely use that label.

Prime...you're going to get the best. Angus...overall usually good quality but only the very best would be prime.
