All of those models except the non-Retina 2012 model have soldered-in RAM.

The Retina 2012 and 2013 models will have either 8GB or 16GB built-in.

The 2014 and 2015 models come with 16GB only built-in.

The internal SSDs can be replaced, though Apple uses a proprietary connector on their SSDs that is not compatible with common M.2 drives and will require an adapter.

I recommend using ifixit.com for detailed instructions on fixing or upgrading and replacing parts on all Macs. Their guides are quite good and they also sell many of the parts you might need.
