my daughter is the cooking genius in my house, a while back she decided to make beef wellington, I had only heard of that dish in old movies, It took her a long time to make it but wow it was so good, I doubt there are many restaurants that make the dish as it would be very expensive.

Pikoo Pot Roast

8 lb. roast

1/2 cup red wine vinegar
1/2 cup olive oil
1/2 catsup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 TBLS fresh rosemary or 4 tsps dried
2 TBLS granulated garlic or 8 cloves fresh 1/4 cup dried mustard

Depending on pan use 3 bottles of beer.
Make sure roast is drenched in beer.
Put a lid or foil on the pan to seal.
Roast overnight, 200 degrees, 12 hours.
