I had lunch with a client the other day who has been a food broker for thirty years and reps Conagra and several other huge meat and poultry producers. I asked him about decontamination. The most interesting item he related is that even in the cleanest plants, poultry producers acknowledge that 12% of the product coming off the line contains salmonella. He also agreed that meat radiation will never catch on. He says that radiation technology has been know for many years and hasn't caught on because the producers don't think the public will buy irradiated food.
