According to the speaker, the wet-market tradition goes back hundreds, if not thousands of years, but they never came out of those unsanitary old ways like so much of the West eventually did.

They also believe in eating fresh food every day but without care for how any of it is handled. And, they eat strange and rare animals because they're thought to have magical or aphrodisiac properties.

The communists won't try to upend all that because they want to avoid a nation-wide revolt. So, many more of them will die needlessly from the status quo. There will also be more diseases coming out of China.
