I have looked into building a sausage curing cabinet. An old upright freezer or refrigerator works well, retrofitted with some controls. Where I live is way to dry so I need to add moisture to the air in the cold box. I purchased some of the controls but the final project is still on hold. Anyway, you can get a humidity monitor with a relay output and trip on a little fan to push dry air in if the humidity spikes up to much...or draw some moisture in if the reverse happens. Omega Engineering ( omega.com ) might be a place to take a look for a humidity sensor with a dual output switch (hi/low) and some deadband adjustment in the middle.

As long as you can isolate the rock with a barrier like landscape cloth that allows water through but not soil that is good.. You can always put a little pass through in (pipe/tube with some silicone goop to seal it with the barrier) that goes into the water/rock area but is accessible above so you can suck out water with a baster or some such.. a mall aquarium pump comes to mind ?

I hope to have the full greenhouse (with hot tub LOL) within two seasons :)

Edit .. I cannot think of anything much sweeter than skiing in the morning and then lounging under a banana tree (s) and amongst the frangipanis (plumeria) and oleanders relaxing in the hot tub to prepare for the next day :) Toss in a few brugsmansias :)
