Look into WIFI 6 mesh setups. They can have issues with older buildings but most likely they will provide the fastest speed.

I'm old school about wired vs. WiFi for network coverage, so if you can go wired, do it. Wired is simply more reliable, period.

That said, WiFi is getting better all the time and current wireless mesh setups like The Ox mentioned can work very well. They'll certainly be cheaper than getting everything wired.
