Maybe a healthy clean-out process? Good point. Creative Destruction According to Schumpeter, the "gale of creative destruction" describes the "process of industrial mutation that continuously revolutionizes the economic structure from within, incessantly destroying the old one, incessantly creating a new one". The future survivors are already morphing. Restauranteurs - the good ones - are very adaptable. I've been tracking the industry at Nation's Restaurant News. nrn.com
