"A "living wage" for doing what? Interpretive dance therapy? "
It means making enuf on any job with a 40 hour work week to buy food, shelter with utilities, health care, clothes at a thrift shop, free K-12 ed, with extensions on both ends that we can fight over, transportation to the job, and an Obamaphone..

It won't be the the same wage everywhere.

A living wage for being a human being. The high end restaurant, for example, is not going to be able to cut its work force without reducing demand for its service. Raise prices to high and people may not come to dine. It is not that simple in terms of passing the buck. And outsourcing is not always an option, pending on the nature of the business, especially if it's domestically oriented.
McDonalds, of course, can get away with reduced help at the moment because most people are into take out and don't want to eat inside.

Most small businesses will manage to survive and thrive if they are part of the underground economy, where they primarily take cash for payment.

You look at things primarily from a corporate or big business standpoint. I look at economics also from the standpoint of very small business, which generates profit up to 5M per year.
