If you have the option, set up your email so that it doesn't automatically download images. Oftentimes these emails contain an image - usually just a pixel (called a "tracking pixel") which is not noticeable. When you view the image, the ne'er do well gets a conformation that you saw their email. A viewed email means your email is active and it's worth it to them to keep sending emails to you - after all you might bite by accident or on purpose. I have a bunch of email addresses - this seems to work, I get an illegitimate email maybe once a week for all of them.
