In terms of secure email, protonmail.com, whose servers located in Geneva Switzerland, and potentially at this point out of the reach of the US Government, offers end-to-end encryption in its email client. I have an account that costs me a few bucks a month but I believe there is a free option. They offer a desktop client as well as a smart phone app. End-to-end encryption means that between your device and the server in Switzerland, the content of the email is encrypted.

A point of clarification... This is not meant to recommend an end-all/be-all solution to email comms but simply a means to make things a little better for folks in terms of security - orders of magnitude better than gmail or Outlook. At this point there is no communication of which I'm aware that is completely secure.
