I see the goal is to protect the cambium and make for an easier match up.. slicing two branches and attempting to line up the cambium is less successful so seems less practical .. we did that at Humber in landscape school ...

as to the thyme.. I know your area is warmer than where I was in Scarborough, not much but enough maybe for reliable peaches too ?... google says zone 4 but I had trouble with it... and was certainly warmer than where I am now more north.. Had a customer in Aurora that loved thyme of all sorts, golden , wooly, creeping ,,, would never grow reliably ... She would be zone 5. I guess..

I think the temp fluctuations and lack of snow cover in the last say 10 years took their toll... more so than looking at zone alone now... There is an interesting FB thread Zone Busters :) Happily my Ghinko, Montauk Daisy and hardy Bamboo are doing fine (Bamboo had less die than in Toronto so I think as always yes fluctuations are worse than just cold...

Have you tried native Pawpaws.. I'm getting some this year hopefully but not wanting little ones.. at 65 time is running out LOL.. don't mind paying a premium... I had two HS pals move on this year at only 65 .. and John Pitera passed I see also from SI :(

as an aside looks like the Ryzen 5 is easier to get than 3... will prolly go lower end video as long as it can hook up say 4 screens ... even the 600$ range is in short supply ... so I can always add later... My machines are hanging on by duct tape ans magic :)
