Only 97 F here today... so I will venture into town a bit later. A visit to the local wine shop is in order. As events have required it, I have hosted guests recently... and while the wine cellar remains more than adequately stocked for enabling varietal and geographical explorations, pairing potentials, and blending experiments, I have an unfortunate predilection for educating others about older Burgundies and Barolos. When I'm cooking with and for friends and family, I've noted they have a tendency in one leading to another. My wishing to not leave anyone's education incomplete... has taken a toll. As they take time to mature... and they must begin the process... And as the restoration of the flow must be exploited while possible... And as the risk of future lock-downs... whether or not pointless... is a risk that must be fortified against... A replenishment sortie...
