It was years ago...when I was in the teens. I enjoyed every minute of that job....cutting beef, pork, Alaskan salmon and lots of other stuff, but no bulls. I made a lot of jerky sausage and tiger meat (not made from tigers). I worked on a few pig's heads to make headcheese which the most disgusting thing I ever ate. Blood sausage is the second worst. It was hard work but the real fun came in the fall when people wanted their deer turned into sausage. If I got five hours of sleep I was lucky. So did they know? Hell yah...that's how they made money.
