Quality of water is very important for your health - sterile water produced by reverse osmosis in desalination plants is not good for you - the need adding trace minerals therefore certain spring waters are tastier than others. Example lack of traces of Lithium affects kids growth. Of course you need traces of Mg HCO, Cl, Ca, Na, SO, NO, K and other micro chemicals as ions in the tasty water.

I know from childhood we were traveling to a spa called Herculane in Romania known since Roman times for its health related springs and hot springs.(btw the coldest place on earth Oymyakon, Siberia, Russia (-67.7°C and lower in winter, has a warm water spring)
I got my first lessons in Germany where the water in the beer must have certain qualities and every beer producer brags about his own spring water.
