If you get stuck in a waterspout, I think the advice is the same as for a riptide -- swim laterally relative to the current until you're out of it. The sooner you fall out the better.

My wife was caught out to sea with her grandfather and little brother on a small boat when she was a kid, with three spouts between them and the shore. Her grandfather lashed them to the boat, ignored the coast guard orders to stay out to sea, and ran for shore. She says it was one of the only times she ever saw her grandfather look afraid.
