Booking.com has extreme networking moat because they provide the best and most services. They have extreme SEO capabilities which attracts the most travellers. Search "hotels in Germany" and Booking.com is first.

Advertising on Booking.com is free. You only pay commission when your hotel is paid for. The commission is effectively marketing costs to gain access to Booking.com's vast customer base and SEO capabilities. No independent hotel can compete on digital advertising.

Of course hotels would rather the lower commissions. But you have to see where all the travel demand is coming from and that's through Booking.com. And I don't believe Booking.com will be overcome anytime soon unless some company attracts all the travel demand.
