If you bake things yourself, you can really reduce the salt. I bake bread with very low levels of salt- and the bread is just yeast, flour, water and salt. You could make bread with no salt- they do in Italy. It's called "common bread" or "bland bread". We were told by some folks we met that on one side of the Tiber they used salt in the bread and on the other side they didn't.

At any rate, bread baking is fun and you can make it exactly the way you want it. I like common bread- it's good.
