I'm an EE. I think you are both probably worrying about nothing re electric naturally in earth environment.

The danger to your health is from time-varying magnetic fields you may be immersed in that penetrate soft tissues and induce small currents inside the body.

How big is that danger? It depends on frequency and intensity. "Grounding" yourself will do no good for these. You simply must avoid the best you can or limit exposure.

When I get a minute later I'll post what the background potential is from your head to foot.
It doesn't vary a lot with time. It's just always there. Cavemen lived in it. Whether you wear shoes or not makes no difference in my opinion. But I take the shoes off whenever I can. Just more comfortable and better to be unbound.

To your nose, while standing there is about 200 V. However, your body is an equipotential surface with the ground due to charge redistribution.

Shoes or conductive sheets are not going to matter.
