Based on what you say, I think you are hosed as no backup exists anywhere. Maybe others can recommend something I cannot think of.

You may try calling Apple for another solution but as far as I know if you don't backup your devices when they lose their data it's gone unless you have some type of software that can restores erased data.

Back up back up back up.

On the plus side you won't repeat this situation again in the future as I'd bet you wife isn't super happy about the iPhone 7 data.

You might check iMazing at imazing.com
I think they can't get data from an iPhone that's been erased, but that data may still be there and the directories have been erased. Anyway you might check with them.
