My wife's father had a butcher shop in Chicago in Little Italy area (Taylor Street).

His Italian sausage was the best. We've worked with the local butcher shop on a match. Since we eat it alot, we make it from the year's venison harvest. It is much leaner and not as juicy, but a bit lean is healthy to us, and still tasty. I like organic protein and plant protein we raise in our gardens

When visiting family in Chicago, we also buy "Franky Deli's" Italian Sausage in Elmhurst IL. It is located by her sister's place in Westchester IL. Both the sweet and hot are the real deal.

PM me an address where I can send you some kraut. It's so good many eat it straight out of the jar. We nuke and add butter. It will work great on a July 4th brat fry. hint hint. LOLn

Good Brats are easy "Johnsonville Original" brats. They come in 5 and 12 pack. The original meat market is 3 miles from my Wisconsin's home .

Thanks for the excellent recap!

Bob
