KY is mostly Appalachia
That's not even close to accurate. Appalachia makes up roughly 20% of the geographic area of the state, and total population in that area is less than that as a percentage of the whole.

The state is remarkably diverse in terrain. There are 6 distinct natural regions in the state. The Bluegrass is the best known, and it's actually a lot like the true midwest, although much prettier due to some natural rolling terrain that comes form the limestone base.

leaving the latecomer Scots and Irish to go fill these weird little valleys tucked away over the mountains from everywhere else.
That's pretty accurate as far as the Appalachian area of KY is concerned, but it's an inaccurate stereotype concerning the balance of the state. As one who descends almost 100% from "decent" English who were in what became Kentucky decades before it became a the 15th state, I'll try to excuse your ignorance and take no offense. :)

BTW, you do know that epicure is from old Kentucky stock, probably of the "decent" English sort based on where I understand her kin were from.
