It helps when running lots of programs at once. Photoshop, Vegas Pro, Camtaisa, Snagit, iTunes, multiple browsers and tabs. No slow down at all.

And I am a guy that fully populated a 4 Meg board late 80's for $ 400.00 back in the day = the 64 gig would have been The defense budget lol $ 64,000.00

...but RAM is cheap now.

It is, unless it's inside an Apple Silicon chip. The incremental pricing for larger RAM sizes is far beyond what traditional RAM costs.

I'm sure it's a decent profit driver for them.
