Animal fats and saturated fats in general have been demonized while they've been the healthy fats all along. Olive oil (if it really is olive oil) is ok, but not in excess. Butter, lard, coconut, and avocado oil are best. Canola, safflower, sunflower, cottonseed, grapeseed and corn oil are very bad in anything more than small quantities, especially if not consumed with omega-3s in around a 3:1 ratio of omega-6 to omega-3.

A typical North-American consumes a ratio closer to 20:1 or worse because seed oils are cheap. Restaurants use them almost exlusively, so if eating out it's hard to keep it healthy.
