Chopped meat has a one day code....whatever is made has to be sold that day. That's why it is hard to find in the late evening. They try to make only enough to sell that day. If any is left late evening it will get 'reduced" stickers. Meat managers in chains have been known to re-mix it with fresh in order to keep 'SHRINK" numbers under control especially if bonuses were tied to SHRINK.
