I think you are looking for complicated answer instead of simple answer. Chinese were malnourished in the past, got most of their calories from grains and ended up very short. That's a known link. Malnourishment and lack of protein results in growing children falling short of their full potential height.

Which is a way to look at it in general. Human embryo has certain potential. During pregnancy, either all of that potential is retained or some is lost. Same during child development.

You don't go over 100%. You can only get to some percentage below 100%.

Then that one person and one from opposite sex create another new embryo that gets a new potential. And this new embryo gets some input into its DNA from the life of the parents.

So that 100% potential can only be changed from generation to generation. In other words, evolution.
