Please review your Scotch production guides. You do not ferment it very long at all. If I recall correctly, the fermentation process ends in less than a week. Then it goes into the big copper cauldron for distillation and at that point, all the yeast is definitely dead thus precluding any further fermentation. Then it is put in the barrels for aging. And not all Scotch improves with age. There is also the problem with the Angel's Share....
