Here you see an overview of the plantation and processing facility. To the left is the garage for the ATVs.

This next slide shows the habitat of the civit. The red fruits are the choice coffee beans.

Here you see the workers leaving on their ATVs to go out and collect the Special Beans.

This slide shows Ignacio scouring the landscape for cat droppings. Ignacio's entire family is involved in the processing of the beans.

Ignacio has found a good spot. He holds his nose with the traditional left hand and carefully picks out the beans with tweezers made from bamboo. He will place the beans in the burlap sack on his ATV.

Ignacio enjoys his lunch of plantains and rice.

Having filled his bag, Ignacio now returns to the Processing Plant.

Here is Ignacio's wife Marta, she is sorting the beans prior to the Washing Process. Her young son Julio seems amused.

Marta has sorted the beans and has begun to wash them. She wears the traditional Sumatran face mask made of silk. She is not crying, this is a natural by-product of the Washing Process.

The Clean Beans (and I use the term loosely) are stored in this area prior to shipping. Loss from rodents is quite minimal.

Here we see the beans being loaded on the airplane, bound for the United States!

A satisfied customer!

(Next time: coconut processing!)
