Yes. Fennel seeds are what give Italian sausage its distinctive taste. You can make a very good spaghetti sauce with the sausage, some dried mushrooms, some fresh mushrooms, onion, garlic, and plum tomatoes. And maybe an additional sprinkling of fennel seeds.

It is fennel. Great stuff. Anise I believe has more of a licorice flavor as in annisette.
