Don't know why I can't get this URL to work directly. It is for the FDA's Final Rule on the irradiation of food. Contains a good evaluation of the chemical and microbial processes involved.

Free radical formation is within acceptable limits based on the studies the FDA examined. One study did note an increased incidence of heart lesions in dogs but its results could not be consistently replicated. Overall the benefits definately outweigh the risks. I'd choose irradiation over E coli anyday if that were my ONLY option.

Nice summary of the processes involved in RIBS. Spectrual patterns are also bacteria specific.
