Some favorite recipes:

Red Ant Chutney

Ants are collected in leaf cups and put directly into the hot ashes of the fire for a few minutes. The ants then are removed and ground into a paste. Salt and ground chillies are added and the misture is baked. It has a sharp clean taste and goes well with alcoholic beverages. If you don't have ashes or leaf cups, I find the ants can successfully roasted in a very hot, oil-free frying pan.

Bee Grubs in Coconut Cream

Marinate bee grubs, sliced onions, and citrus leaves in coconut cream containing some pepper. Wrap in pieces of linen and steam. Serve as a topping for rice.

White Ant "Pie"

Termites, sugar, and banana flour are ground together to form a kind of honey-nougat paste. Remember: termites contain three times the protein of T-bone stake and approximately the same amount of fat.

Crisp Roasted Termites

Swarming termites are drowned in water, sun-dried, and roasted to a delicate crispness. They will keep for a year in an air-tight tin.
