Jane, speaking of cucumbers, how about a nice salad? This one is a little different, and I thought you might enjoy it.

Oriental Marinated Cucumber

2 tsp. grated fresh ginger or 1 tsp. ground ginger
3 T rice or white vinegar
3 T soy sauce
1 medium unpared cucumber, raw
1 or 2 scallions or 1 small red onion, sliced
Pinch of red cayenne pepper (optional)

Soak grated ginger in vinegar 1 hour, or mix ground ginger with vinegar. Then combine with soy sauce and mix well. Slice unpared cucumber into spears, then slice spears into bite-size chunks. Thinly slice the scallions. Combine all ingredients in a glass bowl and chill in the refrigerator before serving.

Jane, this recipe seems to be very calorie conscious. I might add a drop or two of sesame oil, not the really hot variety, however.

Really! NOT all the undead are tacky zombies. I mean, low rent. Don't even have nice coffins. The aristocrats of the undead are us vampires. Obviously.
