Holy cow, 80 is one helluva prediction;
re :FTRK; Their satellite acquisition system states that it can track 3 satellites simultaneously, but I can not pretend to be educated enough in this area to comment on the feasibility of usages...

Perhaps you can email their Chief Technical Officer and pose that question to him.

Also, they are quickly ramping up their Flat Array Antenna which is a different technology altogether, and will not be expensive from what I understand; but I am not sure if the Flat Array can track two satellites and then send the feed to separate monitors, (although commenting as a layman that would seem possible at some point.)

Dish has been a gem since the selloff in the fall.
But it is FTRK that brought me to DISH, LOR and ORBI.

Technical solution does exist. Phased Array Radar was developed to solve the similar problem and has been used by military over a few decades. If a part of its underlying technology is used, you can build one small dish which electronically changes radio wave reception angle without mechanical motion. Question is cost. If Moor's law applies, it should be affordable by now. Does anybody know?
