Is High Flight by John Gillespie Magee the poem you have in mind?

Oh, I have slipped the surly bonds of earth
And danced the skies on laughter-silvered wings;
Sunward I've climbed, and joined the tumbling mirth
Of sun-split clouds--and done a hundred things
You have not dreamed of--wheeled and soared and swung
High in sunlit silence. Hov'ring there,
I've chased the shouting wind along, and flung
My eager craft through footless halls of air.
Up up the long, delirious, burning blue
I've topped the windswept heights with easy grace
Where never lark, or even eagle flew.
And, while with silent, lifting mind I've trod
The high untrespassed sanctity of space,
Put out my hand, and touched the face of God.

I have a small anthology of writings about Flying. Thoughts Take Flight

Here is another poem that also mentions eagles and God...though I feel sure it was the first poem that you had in mind as it's pretty well-known.

Flight

I've heard the symphony of the skies
and flown far above the place where eagles fly.

I've chased the wind through a billowing cloud
and slid down a rainbow so free, so proud.

I've seen the moon kiss the sun
with a million brilliant colors when day is done.

I've flown toward forever by the stars' guiding light
on wings of silver softly through the night.

I've flown far beyond your dreams but not mine
to a quiet more peaceful place in time.

And in the stillness where I've lingered a while,
I've heard God sing and I've seen Him smile.
