Well, the whole thing about chopping chocolate, is that you want to blend the chocolate swiftly with the rest of the ingredients over the double boiler. If you stir it a lot you can achieve the same result. I think the theory on this is that you don't want the chocolate to get overcooked or have it separate. Myself I always err toward the side of putting a little too much butter in, then adding powdered sugar if required to thicken.
