Janice, that is an astute observation. I have Linda's cookbook, and one of the problems with the way she cooks vegetarian food is that it is quite full of butter and cheese and greasy little soy "meat" products. Typical English food, veggie sausages in puff pastry and cauliflower with a pound of cheddar melted on top of it in a cream sauce. In fact, her frozen dinners were criticized as having more fat than Stouffer's or something, and that is a LOT of fat!!! Since a low-fat diet--especially the traditional Japanese diet high in soy--is a protector against breast cancer, and Linda was not following this kind of vegetarian diet, I'm not sure what conclusions we can draw. Also, it is likely that she may have smoked at some point. We know Paul still smokes a lot of marijuana, at the very least. And we know nothing of her family history for breast cancer. The McCartneys became vegetarians when they looked out the windows of their farmhouse and saw the little lambs frolicking so appealingly, and looked down at, oh no, lamb chops on their plates!! They immediately stopped eating meat forever. I mean, duh!!!! Still, the sentiment is nice, in that animals are saved. There are many reasons to be a vegetarian, and health is only one of them. My own personal concern is that making grain into meat is so damaging to our ecology, and grain is healthier for us, as well. Don't you remember all those discussions about cow flatulence? So, as Linda would say, don't eat anything with a face!!! For those of us who want to honor Linda and cannot make such a pledge, Paul suggested contributions to cancer charities, instead.
