I think the Alice B. Toklas recipe for asparagus follows the theme that generally, if you add plenty of real butter, and sometimes cream as well, there is little you can do to really ruin good, fresh food.

I am not sure if it is still true, but for the first few years of Gourmet magazine, almost every recipe followed this time-worn secret. In fact, I think it is the mark of a really good cook that he or she can prepare meals without these yummy things and still create edible pleasures.
