The main thing about Enoch is that he walked with God as Noah and Adam did. The only reason I throw Enoch out their is the fact that he did not die a natural death as God said that Moses was asleep or would sleep. Then in Jude Michael was fighting satan for the body of Moses. If he were not dead would they fight for his body or him? These are just thoughts. I think the Transfiguration was a part of the fulfillment of Tabernacles for the Apostles offered to build them a Sukkah. Tabernacles is mentioned strongly in the future Kingdom in Zechariah. Unless the Holy Spirit inspired them the Apostles did not know Moses or Elijah to be able to physically recognize them so their is something God wants us to know about who was there with the Lord in His Glory. I am sorry, I just want to make one more point on the 2 witnesses. I believe they are going to be men that have not died physically because I do not think God is into reincarnation and once we have died we are not physically born into this life again but come with resurrected bodies like Messiah. Then it does not necessarily say these men will be born to a woman so that might make part of the picture clearer later.
