This post Message 4229815 will answer some of your questions regarding whether NT is worth the extra hassle. And from the comments I read in the Coffee Shop/Dream Machine, Build your own PC, thread on Silicon Investor yes a multiple monitor setup works very well. Many of the posts on the Dream Machine thread are from SI members who are building multiple monitor trading systems.

i have NT40 on one machine, although it runs well and almost never crashes, a lot of my toys are not compatible...drivers are not available for either of my printers. Several of my other programs will not function in NT.
its hard to know if its worth the effort until you find out what part of your system will be compatible.
you can do multiple plots of multiple stocks in WOW without having multiple screens.
i have had difficulty with a multiple monitor setup. Dirke and others have mentioned that it should work, but no luck so far.
maybe my machine has a jinx on it.

Richard,
I would only consider using the dual video port on an NT. It is more prone to problems and you can survive those problems with NT but not with W95. Maybe w98 will be better in that area.
